Grilled Apples with Apple Butter Sauce

Everyone knows that the classic side dish to pork chops is applesauce. I'm not sure how, when, where or why this became a traditional side to pork, but the sweetness and tartness of apples make it a very good accompanyment to almost any pork dish. I wanted to try something different than good ol' applesauce. And since I was grilling my pork steaks I thought, "hey, why don't I just grill my apples, too!" INGREDIENTS FOR THE GRILLED APPLES:
  • 4 Golden Delicious Apples, cored and sliced about 1/4" thick
  • 2 TBSP. Sugar
  • 1/4 Cup packed brown sugar
  • 1/2 tsp Cinnamon
  • 1/2 tsp AllSpice
  • 1/2 tsp Kosher salt
  • Juice of one lemon
  • Metal skewers

In a bowl, mix the first 7 ingredients together. Place the apples in the refrigerator for 15 to 20 minutes, letting the lemon macerate the apples. When ready to grill, skewer the apples. Do not throw away the juices the apples gave off. Save it for the apple butter sauce. Grill the apples on medium-high grill for about 5 minutes per side, creating grill marks on them.

FOR THE APPLE BUTTER SAUCE:

  • The macerated juice from the apples
  • 1/2 Cup Apple Wine
  • 1 TBSP. Sugar
  • 2 TBSP. Unsweetened butter

Place the macerated juice, the apple wine and the sugar in a small saucepan and cook on medium-high until it starts to boil. Reduce heat to medium and add the butter, one tablespoon at a time until it is melted. Simmer for about 10 minutes, or until sauce is reduced by half. Serve on the side of the grilled apples or drizzle apples with the sauce.
